Raíz comes from black and white listán vineyards formed by vines over 40 years old (some of them centuries old), located in La Perdoma, in the center of the La Orotava valley. This is a vineyard planted following the traditional method of the area known as 'cordón trenzado' (braided cord), to which regenerative and environmentally friendly viticulture techniques have been applied for decades.

Fermented in open vat for 3 days.
Raíz was fermented in an open vat for 3 days. The resulting paste was pressed with wood and rope. The disgorging was carried out by gravity, without mechanical intervention. During its production, only native yeasts from our plots were used and no additives of any kind were added.
Bottles of local production made with 70% recycled glass.
Before being bottled in early June 2022 in bottles of local production made with 70% recycled glass, Raíz remained in a stainless steel tank for 21 months. The clarification and filtration of this wine has always been done by natural decantation. Raíz has been bottled and labeled by hand.
